Chillis are traditionally made with cocoa in them, it reduces the heat you get from the chillis.
This is an adaption on a recipe I found. 2 tablespoons olive oil 1 large red onion, chopped (red onions are sweeter than white or yellow ones) 500 g minced beef 1 cloves of garlic, chopped 1 400g can chopped tomatoes 1 red or green chili, chopped 1 red sweet pepper, chopped 1 yellow sweet pepper, chopped 2 teaspoons ground cumin ½ teaspoon ground pepper 1 teaspoons oregano 2 bay leaves 2 teaspoons salt 1 can(400 g) beans (red, white or black), drained 2 oz (60 g) bittersweet chocolate at least 70% cocoa solids Cheddar cheese for garnishing (optional) 1. Cook the minced beef, onion and garlic in olive oil. 2. Stir in tomatoes, chili, sweet pepper, salt and spices and cook for 15-30 minutes. 3. Add more chili, salt or spices as required. 4. Add beans and cook until heated. 5. Add chocolate, mix well when melted. 6. Serve with rice, cheddar cheese and a salad. |
