Champ is basically Mashed potato mixed with chopped spring onions (Scallions we call them) which have been softened in a little hot milk then added to the mash with seasoning. Not too much milk barely enough to cover the spring onions lightly boil for a few minuites. The the whole lot is covered in melted butter...

Number of downloads: 8However a really nice version, a creation of my own. Mash the potatos then add chopped up fried smoked bacon.. Just as the bacon is nearly cooked add the chopped spring onions to the pan with the bacon to cook with the bacon for the last few minutes and absorb the bacon fat... then add to the mash, salt and pepper and smother with butter you can add cheese as well strong chedar is great ... the absolute bestest comfort food...
