really easy to cook all you need is 2 eggs, 150g flour, 150g sugar, 150g butter and 2 table spoons of lemon juice + you can use ready made pastry if you want and not use the flour!!

K. My version...
One can condensed milk.

Number of downloads: 01/4 cup of freshly squeezed lemon juice plus zest. Do not use that instant yuck. Three eggs. One graham cracker crust... ![]() Six tablespoons sugar Dash of Cream of Tarter Splash of Vanilla Flavoring Separate eggs, yoke from white. Save whites and set to the side. Do not get anything mixed in with them. At all. Not even a speck of dust! Mix the three egg yokes and the condensed milk. Then add the lemon juice. Add the juice last because if you add it to one or the other first, it doesn't mix well. Pour into the graham cracker crust. Now for the meringue... Use an electric mixer. Add the dash of vanilla and the cream of tarter to the bowl with the egg whites. Turn on the mixer (I just use a hand mixer) and let 'er rip. Gradually add the sugar to the mix. Mix add mix add mix add. Two tablespoons at a time. The rule of thumb is two tablespoons of sugar per egg white. Beat until meringue satiny smooth and firm peaks form. People always warn you... Don't over beat! Hrmph. I don't think you CAN overbeat.... If it's foamy? Beat it some more. Needs to be satiny. Pour meringue over lemon pie and place in a 400 degree oven for 10-15 minutes. It should look like this when done: ![]() Refrigerate for several hours before serving. And there ya go. |
